    This dish is super easy. Roasted asparagus and Brussels sprouts require only a small amount of prep, a large baking sheet, and a timer - that's really it.

    It's healthy. Asparagus and Brussels sprouts are undoubtedly a healthy addition to any meal, but you'd never know it because they are so delicious.

    There are only a few simple ingredients needed to create this versatile side. You can make this recipe with everything from grains to salads to meats.

    You can personalize this dish. Try any number of seasonings, fresh herbs, citrus, or sauces to round out your meal.

    What You'll Need

    • Brussels Sprouts Look for sprouts that are bright green, firm, and heavy for their size.
    • Asparagus Both thin and thick asparagus will work here, just monitor the level of doneness. For particularly large asparagus, you may need a few extra minutes of oven time.
    • Olive Oil This is my favorite brand of olive oil, but use whatever you have on hand. You can also use a neutral oil like avocado oil or grapeseed oil.
    • Kosher Salt I like to use Diamond Crystal kosher salt because its unique shape provides excellent, even coverage of food.
    • Pepper Fresh cracked pepper is a treat here.

    • Chili Flakes
    • Balsamic Reduction
    • Fresh Lemon
    • Fresh Herbs
    • Dried Spices
    • Parmesan Cheese

    How to Make Brussels Sprouts and Asparagus

    Step One: First, preheat the oven to 400 degrees Fahrenheit. While the oven heats, clean the Brussels sprouts well, removing any outer leaves with visible dirt or brown spots.

    Trim the stem, then cut the Brussels sprouts in half. Toss with olive oil and salt.

    Step Two Place the Brussels sprouts on a sheet tray lined with tin foil or parchment paper and transfer to the oven to roast at 400 degrees Fahrenheit for about 20 minutes. Remove from the oven.

    Step Three Meanwhile, trim the asparagus. Feel for the edge of the hard part of the stalk with your fingers, then hold on both sides and gently snap. Cut the asparagus into 1.5- to 2-inch pieces.

    Step Four Toss the asparagus in olive oil and salt, then add the asparagus to the sheet tray with the Brussels sprouts. Roast for another 10 minutes.

    Step Five Remove from the sheet tray and serve immediately.

    Variations

    Balsamic Vinaigrette Create (or buy) a simple balsamic vinaigrette or balsamic glaze to drizzle over this recipe.

    Spicy Add a bit of cayenne or some chili flakes to add some heat to this dish.

    Seasonings Try any number of dried spices with these vegetables, like Italian seasoning, Herbs de Provence, ranch seasoning, or dill. Add the seasoning while tossing with olive oil and salt.

    Creamy Dill Sauce Add some tangy dill sauce to the veggies!

    Fresh Herbs Finish with some fresh basil, dill, mint, or chives.

    Parmesan Add a bit of grated parmesan cheese to the roasted vegetables.

    Lemon A squeeze of lemon juice can add some lovely brightness to this dish.

    • For the best flavor, make sure to place your vegetables in an even, single layer on your sheet pan. This will allow for better browning (more flavor!) and prevent the vegetables from steaming.

    How to Store

    Fridge You can store air fryer pears in an airtight container in the fridge for 3 to 5 days.

    Freezer I do not recommend freezing this recipe, as the texture will suffer.

    To reheat, add the vegetables to a pan with a bit of olive oil over medium-low heat for a few minutes, or cook in the microwave until heated through.

    How to Make a Meal

    Here are some suggestions for main dishes to go with your roasted vegetables:

    Soup Try these veggies as a side dish for a variety of soups, like Chicken Pastina Soup, Instant Pot Navy Bean Soup, Instant Pot Chicken Stew, or Chicken and Cabbage soup with Ginger.

    Risotto These vegetables would be fantastic over some Chicken and Leek Risotto.

    Ingredients

    • 1 pound Brussels sprouts
    • 1 pound asparagus
    • 2 tablespoons olive oil divided, or more to taste
    • ½ teaspoon garlic powder optional
    • ¼ teaspoon chili flakes optional
    • kosher salt to taste
    • pepper to taste

    Instructions
