Easy Roasted Brussels Sprouts and Asparagus

Ingredients

  • 1 pound Brussels sprouts
  • 1 pound asparagus
  • 2 tablespoons olive oil divided, or more to taste
  • ½ teaspoon garlic powder optional
  • ¼ teaspoon chili flakes optional
  • kosher salt to taste
  • pepper to taste

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Clean the Brussels sprouts, removing any outer leaves with visible dirt or brown spots. Trim the stems, then cut the sprouts in half. Toss with olive oil and salt.
  • Place the Brussels sprouts on a sheet tray lined with tin foil or parchment paper and transfer to the oven to roast at 400 degrees Fahrenheit for about 20 minutes. Remove from the oven.
  • Meanwhile, trim the asparagus. Feel for the edge of the hard part of the stalk with your fingers, then hold on both sides and gently snap. Cut the asparagus into 1-inch to 2- inch pieces.
  • Toss the asparagus in olive oil and salt, then add the asparagus to the sheet tray with the Brussels sprouts. Roast for another 10 minutes.
  • Remove from the oven and serve.

Notes

General
  1. Try some of these sauces and flavorings for these roasted vegetables: dried herbs like Italian seasoning or herbs de Provence, balsamic reduction, fresh herbs like basil, dill, mint, or chives, or a squeeze of fresh citrus like lemon juice.
  2. Oven temperatures can vary. Using a reliable oven thermometer will greatly improve your baking and roasting!
  3. Try making these veggies ahead for meal prep.
  4. For the best flavor, make sure to place your vegetables in an even, single layer on your sheet pan. This will allow for better browning.
Storage
  1. Fridge You can store air fryer pears in an airtight container in the fridge for 3 to 5 days.
  2. Freezer I do not recommend freezing this recipe, as the texture will suffer.
  3. To reheat, add the vegetables to a pan with a bit of olive oil over medium-low heat for a few minutes, or cook in the microwave until heated through.
