Blackened Chicken Sandwiches

These delicious and easy blackened chicken sandwiches have bold, smoky blackened chicken thighs, perfectly toasted buns, creamy mayo and crisp lettuce for the perfect spicy chicken sandwich.

Ingredients

Chicken

  • 1 pound chicken thighs
  • 1 tablespoon olive oil or avocado or grapeseed oil

Blackening Spice

Sandwiches

  • 4 brioche buns or other bun of choice
  • 4 tablespoons mayonnaise
  • 1 cup iceberg lettuce shredded

Instructions

  • Whisk together the spices to create the blackened spice mixture. Taste for seasoning and adjust if you'd like.
  • Place a skillet over medium high heat. Add the oil.
  • Pat the chicken dry. Coat them on all sides with the blackening spice.
  • Cook chicken on one side for about 5 to 6 minutes, until it forms a blackened crust.
  • Flip it and cook for another 5 to 6 minutes, or until the chicken is cooked through. It should read 165 degrees Fahrenheit on an instant-read thermometer.
  • Remove the chicken from the pan. Let rest for a few minutes.
  • Meanwhile, toast the buns until golden brown.
  • Smear the top bun with mayo.
  • Assemble sandwiches.
  • Serve right away!

Notes

General
  1. If you only have table or sea salt, divide the amount in the recipe by half.
Storage and Reheating
  1. Fridge Store leftover chicken thighs in an airtight container in the fridge for 3 to 4 days in an airtight container. I recommend storing buns, lettuce, and chicken separately.
  2. Freezer You can freeze the chicken for up to 6 months. To reheat the chicken, thaw it in the fridge overnight and then heat it up in a pan with a bit of oil, in the air fryer, or in the microwave. 
  3. Reheating Reheat the chicken pieces either in the microwave at 30-second intervals until heated through, in the air fryer for a few minutes at 380 degrees Fahrenheit, or on the stove with a bit of oil over medium heat.
