Turkey Avocado Sandwich Recipe with Chipotle Sauce

Ingredients

  • 2 slices bread sturdy, like sourdough, rye, or Italian
  • 2 tablespoons mayonnaise
  • 4 slices turkey thick
  • 1 avocado sliced
  • 3 slices bacon
  • 4 slices provolone cheese or other melting cheese like gouda, swiss, or mozzarella
  • 4 tablespoons chipotle southwest sauce directions here and in the instructions below; you can substitute store-bought chipotle sauce or another sauce of your choosing

Instructions

Chipotle Sauce

  • Make one batch of chipotle southwest sauce. Place about 4 tablespoons in a container for use on the sandwich, and refrigerate the reamining sauce.

Turkey Avocado Sandwich

  • Fry the bacon until you reached your desired doneness. Do not discard the bacon grease.
  • Brush one side of each slice of bread with mayonnaise. Place the bread in the pan with the bacon grease over medium-low to medium heat mayo-side down.
  • Brush the other side of the bread with chipotle southwest sauce, then add two slices of cheese per slice of bread.
  • Once the cheese has melted and the bread is crisp, remove from the pan.
  • Place one slice of toasted bread on a plate or cutting board. On top of the cheese, layer two slices of turkey, the avocado, and the bacon. Add one more layer of turkey and then the remaining slice of bread with melted cheese. Serve right away.

Notes

General
  • Approximate calories are for a whole sandwich with sourdough bread and chipotle southwest sauce included. I recommend sharing this sandwich.
  • To prevent browning, put a little bit of lemon or lime juice on your cut avocado.
  • Cut your avocado slices while it is still in its skin to cut down on mess. Scoop it out with a spoon for well-shaped slices.
  • Pick an avocado that is neither hard nor mushy. You want one that is somewhat soft, yielding to gentle pressure when squeezed.
Storage
  1. Fridge You can store this sandwich in an airtight container in the fridge for about 3 days.
  2. Freezer I do not recommend freezing this sandwich.
  3. Reheating My preferred method is to reheat on the stovetop. Add a little bit of olive oil or butter to the pan. This way you can reheat the sandwich and re-crisp the bread at the same time.
How to Use Remaining Chipotle Sauce
  • Use as a salad dressing
  • Try as a dip for quesadillas, tacos, or other Mexican or Tex-Mex dishes
  • Drizzle over grain bowls or chicken wings
  • Serve with different proteins like grilled chicken, steak, fish, beans, or tofu
  • Add a spoonful over eggs 
  • Spread on other sandwiches or wraps
