What You'll Need

- Fingerling Potatoes Be sure to scrub your potatoes to remove any dirt and remove any sprouts, green or brown sections, or large eyes.
- Lemon If you don't have access to fresh lemons, try using some bottled lemon juice.
- Garlic I recommend grating the garlic on a microplane or finely mincing it.
- Olive Oil A high-quality olive oil is always nice when your recipe has so few ingredients, but use whatever you have on hand.
- Fresh Thyme or Fresh Rosemary Making this dish with thyme will have a lighter, floral, more lemony flavor and rosemary will have a bold, floral, somewhat piney flavor.
- Kosher Salt My recommendation is to use the brand Diamond Crystal. This is my primary cooking salt and my cooking improved tenfold when I started using it. It coats food more evenly and can prevent oversalting due to its unique flake shape as opposed to a concentrated cube.
How to Prepare
Step One Slice your clean, dry potatoes in half lengthwise.

Step Two Spray or toss the potatoes lightly with a small amount of olive oil and sprinkle some salt over top, coating evenly.

Step Three Place them in the basket of the air fryer. Set to 15 minutes at 375°F. You may need more time for your potatoes to get golden brown, so check at 15 minutes and every minute or so after for desired color.

Step Four Meanwhile, create your dressing. Add the olive oil, lemon juice, grated garlic, fresh herbs, and salt to a jar or small bowl. Add the lid and shake in the jar, or whisk until combined.

Step Five Once the potatoes are crispy, golden brown, and cooked through, dress and serve right away!

Variations
Traditional You can omit the lemon and herbs for a more traditional roasted potato.
Spicy Add some grated jalapeño, thinly sliced Calabrian chilis, or a dash of cayenne to your dressing for some added kick.
Shallot Try adding some finely minced shallot to your dressing in place of garlic.
How to Store
Cool and then store in an airtight container, making sure to transfer to the fridge within 2 hours of cooking for food safety reasons.

This will last for 3 to 5 days in the fridge when stored in an airtight container.
You can! The potatoes will not maintain their crispy texture but will still be delicious. Try adding to work or school lunches, serving with eggs for breakfast, or heating up to add to a quick dinner.
If you plan to freeze these potatoes, do so before adding the dressing. They will last for up to 4 months in the freezer.
Let cool completely, then store in a freezer-safe, airtight container such as a plastic freezer bag or glass container with a lid.
Keep in mind freezing the potato can change the texture and they can become quite dry.
From fridge You can reheat this in the oven for 10-20 minutes at 400°F or in the microwave for a few minutes. Microwaved potatoes have a tendency to be a bit dry, so try to reserve some dressing for after they are reheated.
From frozen Thaw in the refrigerator overnight and then reheat in the oven or microwave as above.
Air Fryer You can also reheat in the air fryer. As there is some variability in the heat level of air fryers, as there is with ovens, try 350°F for a few minutes and test to see if they have been reheated all the way through.

- 1 tablespoon lemon juice
