What You'll Need

- Pie Crust Choose your favorite store bought pie crust for this recipe or make your crust from scratch.
- Ground Sausage Use the ground sausage of your choice here. I recommend pork breakfast sausage, or mild or sweet Italian sausage.
- Fresh Baby Spinach Baby spinach is preferable here because it cooks down to bite-sized pieces. If using a larger leaf spinach, you may want to use chopped spinach instead of the whole leaves.
- Goat Cheese I like to buy pre-crumbled goat cheese. You could also use a shredded cheese like mozzarella or cheddar cheese for a slightly different taste and texture.
- Garlic Fresh is always my preference.
- Eggs I used large eggs for this recipe.
- Fresh Rosemary If you'd like to replace the fresh rosemary, use a bit of fresh or dried thyme.
- Milk Full-fat milk is best here.
- Extra Virgin Olive Oil Or butter or pan spray would be fine here. You'll just want to lightly coat your pie tin to make it easier to remove the quiche from the tin when ready.
- Kosher Salt I always recommend using kosher salt in recipes. It is easier to control the saltiness and it coats food more evenly.
- Pepper I like fresh cracked black pepper here.
How to Make Spinach Sausage Quiche
Step One Prepare the sausage and spinach mixture. Brown the sausage in a pan with a bit of olive oil. Remove and set aside.
Add the garlic and saute until just fragrant, about 30 seconds. Add the spinach and cook until wilted. Combine the spinach and garlic with the sausage in a mixing bowl.
Prepare your pie dish by brushing with olive oil, spraying with pan spray, or greasing with a bit of butter.
Preheat the ovedn to 375 degrees Fahrenheit. Place your pie crust in the pie plate. Poke the pie crust all over with a fork, then bake for 10 minutes. Set aside to cool.
Step Four Whisk the eggs in with the milk, spinach, sausage and cheese, spices, salt and pepper.
Step Five Carefully pour the spinach and sausage quiche mixture into the pie crust.
Step Six Remove from the oven, let cool, and serve.
Variations
Different Herbs Try thyme in place of rosemary. Herbs to Provence would be great here, too.
Fresh Herbs Fresh herbs can add lots of wonderful flavor to this dish. Try topping with fresh dill, basil, parsley, scallions, or chives.
Different Cheese If you are not a fan of goat cheese, try some mozzarella, cheddar, swiss, or any other melting cheese.

- 1 tablespoon olive oil extra virgin
- 1 pie crust prepared
Filling

- 8 ounces sausage ground
- 2 cloves garlic minced

Instructions
- Prepare your pie dish by brushing with olive oil, spraying with pan spray, or greasing with a bit of butter.
- Preheat the oven to 375 degrees Fahrenheit. Place your pie crust in the dish. Once the oven is up to temperature, poke the pie crust all over with a fork, then bake for 10 minutes. Set aside to cool.
- Brown the sausage over medium heat in a frying pan with 1 tablespoon olive oil for about 10 minutes. Once fully cooked, remove from the pan.
- Add the garlic to the pan and cook until fragrant, 30 seconds to 1 minute. Add the spinach and cook until fully wilted, 2 to 5 minutes.
- Add the eggs, milk, rosemary, salt, pepper, sausage, spinach, cheese, and garlic to a large bowl and whisk together.
- Pour the egg mixture into the cooled pie crust and place in the oven to bake for 35 to 45 minutes. Be sure not to overfill or your egg may spill over while cooking.
