    What You'll Need for Prasini Salad

    • Romaine Lettuce Fresh romaine lettuce is the best choice for this recipe. You can buy romaine hearts and shred them or finely slice them yourself, or you can pick up a bag of pre-shredded lettuce.
    • Fresh Scallions These are also known as green onions. 
    • Fresh Dill Be sure to use fresh dill here and not dried. It adds so much fresh flavor to the overall dish!
    • Crumbled Feta Cheese You can buy crumbled feta cheese at the grocery store, or you can buy a block of feta cheese and crumble it by hand. You're looking for about 3 ounces for this recipe.

    Lemon Vinaigrette

    • Lemons I recommend using fresh lemons, but you can also buy bottled lemon juice if fresh lemons aren't available.
    • Extra Virgin Olive Oil If you have access to good-quality olive oil, now is a good opportunity to use it. With relatively few ingredients, the olive oil will shine here.
    • Salt and Pepper Use salt and pepper to taste in your vinaigrette. I always recommend using kosher salt when cooking, as it's less salty per teaspoon than other types of salt, making it harder to oversalt and easier to taste as you go.

    How to Make Greek Green Salad

    Step One Shred the lettuce.

    Kalamata Olives Add a briny element to this salad with some chopped or whole olives.

    Cucumber You can add another fresh flavor to this salad with some chopped cucumbers.

    Tomatoes Fresh summer tomatoes would be a welcome addition to this simple salad.

    Balsamic Vinegar Rather than the tangy lemon dressing, you can swap out the lemon juice for vinegar to have a sweet component in this dish.

    Red Onion This adds a little bite to the salad that many people really enjoy.

    Extra Lemony Add some lemon zest in addition to the lemon juice for an extra bright and lemony dressing.

    How to Store Greek Spring Salad

    I recommend serving and eating this salad right away. If you plan to prepare it in advance, store the dressing in one container and the remaining ingredients (lettuce, herbs, cheese) in another.

    Fridge Store the salad in an airtight container. It can last up to 4 days in the fridge.

    Freezer I do not recommend freezing this dish.

    Ingredients

    • 4 cups thinly sliced romaine lettuce about 1 romaine heart
    • 3 ounces feta cheese crumbled
    • ¼ cup chopped fresh dill
    • 1 to 2 sliced scallions
    • ¼ cup olive oil extra virgin
    • ¼ cup lemon juice
    • kosher salt and pepper to taste

    Instructions

    • Combine the lettuce, dill, scallions, and feta cheese in a large salad bowl.
    • Combine the oil with the lemon juice, salt, and pepper in a glass jar with a lid and shake well. You can also whisk it in a bowl if you don't have a jar on hand.
    • Drizzle the dressing over the salad mixture.
    • Gently toss to combine, ensuring the ingredients are distributed evenly.
    • Taste for seasoning and serve immediately!

      I served this with some greek salmon, lemon potatoes and it was delicious!!
      So fresh and easy! I added cucumbers as I have a bit of a glut of them at the moment.
